Chicken Wild Rice Soup

Wild Rice Soup

1 1/2 c. cooked chicken or turkey, cubed
1/2 c. finely chopped onion or green onion
1 tbsp. finely chopped red pepper
3 (14 oz.) cans chicken broth
3/4 c. uncooked wild rice
1/2 c. margarine
3/4 c. flour
1/2 tsp. salt
1/8 tsp. pepper
1/4 tsp. poultry seasoning
2 c. milk


In a large pot over medium high heat, sauté the onions and red pepper. Remove from pot and place in a bowl, set aside. In same pot add chicken broth and wild rice. Bring to a boil, cover and lower the heat to simmer. Simmer for 35 to 40 minutes or until rice is tender. In another bowl, combine flour, salt, pepper and seasoning. In a medium saucepan at medium heat, melt margarine. Add and whisk in flour mixture. Gradually add milk, whisk until blended. Stir the flour milk mixture into the pot with the rice. Add chicken and cook for a few minutes longer. Makes 8 servings.
