Apricot Glazed Pork Roast

Pork Roast 2 to 3 lbs. lean boneless pork roast
1/3 c. apricot or peach preserves
1 tbsp. Grey Poupon Harvest Course Ground mustard
1/2 tbsp. cider vinegar
1/2 tsp. mince garlic
1/4 tsp. salt|
1/8 tsp. pepper

Cook roast in a slow cooker on the low setting for 5 hours. After the meat is cooked then place pork on a rack in an aluminum lined roasting pan. To make glaze, combine the remaining ingredients in a small bowl. Spread 2/3rds of the glaze over the roast. Bake in a 350 degree oven. Roast will be done in 15 to 20 minutes or when internal temperature tested with an instant thermometer reaches 150 degrees. Remove roast from oven and add remaining glaze. Cover loosely with foil and allow roast to rest for 15 minutes or until internal temperature reaches 160 degrees. Cut into thin slices and serve. Makes about 4 servings.
