1/4 cup butter or margarine
1/4 cup water
1 lemon, juiced
1/4 teaspoon cayenne pepper
Salt and pepper to taste
1 (16 ounce) package frozen broccoli florets, defrosted*
3 Tbsp butter, melted
1/2 cup shredded Parmesan cheese
1 cup bread crumbs
*1 lb. fresh broccoli, blanched
In a large skillet, combine the butter, water, lemon juice, cayenne pepper, salt and pepper. Bring to a simmer over medium heat. Add the broccoli to the pan and stir to coat.
Preheat oven to 350°F. Place broccoli into a medium baking dish lightly sprayed with cooking oil. In a seperated bowl mix together butter, cheese and bread crumbs. Sprinkle crumb mixture over broccoli. Bake uncovered 20-25 minutes or until top is golden brown and cooked through. Makes about 6 servings..
