Beet Cake

1/2 c. cocoa
1-1/8 c. cooking oil
1 tsp. baking soda
1 tsp. vanilla
1-3/4 c. flour
1-1/2 c. sugar
1-1/2 tsp. salt
3 eggs, beaten
1-1/4 c. cooked, mashed beets
1/3 c. chopped nuts

In mixing bowl, combine cocoa, cooking oil and vanilla; mix in another bowl, flour, sugar, baking soda and salt; mix and add to cocoa mixture. Blend in eggs and beets with an electric mixer. Beat at medium speed for 2 minutes. Stir in nuts, pour into greased 9" x 13" baking pan. Bake at 350 degrees for 25 to 30 minutes. Frost if desired. |
