Cranberry Apple Pear Strudel

Cranberry Apple Pear Strudel 1/4 c. walnuts or pecans
1/4 c. dried breadcrumbs
1/4 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/4 c. sugar
1/2 c. cranberries or raisins
2 lbs. pears, peeled, cored and chopped
2 lbs. apples, peeled, cored and chopped
1/2 c. sugar
2 tbsp. margarine or butter
8 (17” x 12”) frozen phyllo sheets, thawed
6 tbsp. margarine, melted
Powder sugar

In a food processor, pulse together the nuts, breadcrumbs, cinnamon, nutmeg and 1/4 cup sugar until finely ground, set crumbs aside. In a skillet, combine the cranberries, apples, pears, 1/2 cup sugar and 2 tablespoons margarine. Cook and stir the fruit mixture over a medium high heat for 20 minutes. Reduce the heat to medium and cook an additional 10 minutes or until most of the liquid evaporates. Remove from heat and cool for several hours.

Instructions to assemble: Lightly grease a cookie sheet. Have melted margarine, fruit mixture and crumb mixture set out. Tear off a sheet of wax paper about 24” long and lay on work surface. Unroll phiylo sheets, remove 4 sheets, and cover remainder with a slightly damp paper towel or roll back up and put into plastic bag. Put one phyllo sheet on wax paper, brush on the melted margarine and sprinkle about 2 tablespoons crumb mixture; add another sheet on top and repeat layers with remaining crumb mixture and phyllo sheets. On top of the last sheet, spoon half the fruit mixture along the long side of the phyllo sheet, covering about a third of the sheet and not quite to the edges. With the help of the wax paper, lift up on the wax paper starting with the long edge with the fruit on it. Roll up the phyllo over the fruit jellyroll style. Lift strudel off of wax paper and onto cookie sheet seam side down. Brush the top of strudel with margarine. Repeat instructions with remaining ingredients for second strudel. Bake the strudels in a preheated 400 degree oven for 30 minutes or until lightly golden brown. Cool on cookie sheet for a few minutes and than transfer to a wire cooling rack. Serve warm or cooled. Sprinkle with powder sugar before serving. Makes two strudels.
