Beef Vegetable Barley Stew

Beef Vegetable Barley Stew 1 lb. beef stew meat, cut into 1" cubes
1 tbsp. oil
3 c. beef broth
1/4 tsp. dried rosemary
1/4 tsp. pepper
1 tsp. mince garlic
2 c. chopped tomatoes
2 c. carrots, sliced
1 medium onions, chopped
1 1/2 c. broccoli flowerets
4 oz. fresh mushrooms, sliced
1/2 c. quick cooking barley
Salt to taste
Mashed potatoes or wide egg noodles (optional)


Heat oil in large pot over medium high heat, add meat and cook until meat is browned. Add broth, rosemary, pepper, garlic and tomatoes. Bring to a boil, reduce heat to simmer. Cover and cook for an hour. Stir in carrots and onions. Cover and simmer for 30 minutes. Stir in broccoli, mushrooms and barley. Cover and cook for 20 minutes or until vegetables are tender. Serve over mashed potatoes or wide noodles. Makes about 6 servings.
